What’s The Story?

couldn’t sleep last night.
went to our tres petite kitchen and i made these muffin.

the original recipe is:
low-fat chocolate chips muffin
300 g plain flour
225 g icing sugar
1 tbsp baking powder
2 tbsps dutch-process cocoa powder
2 lightly beaten eggs
115 ml sunflower oil
175 ml fat-free milk
1 tsp vanilla essence

preheat the oven to 175C.
grease a 12-cup muffin tin.
in a medium bowl: mix the flour, sugar, baking powder, and cocoa with a spoon.
in a large bowl: combine the eggs, vanilla, oil, and milk.
add the flour mixture and stir until just combined.
do not overmix.
spoon the batter into prepared tin (i use ice cream scoop instead of spoon – do it like martha stewart style ;-))
bake for 20 minutes.

i modified.
instead of 2 tbsps dutch-process cocoa powder, i pour 2 tbsps of coffee illy to half of the batten.
be generous with chocolate chips, please… ;-)
i add nothing to the other half of the batten. and voila…, 6 coffee illy muffins and 6 vanilla muffins are ready for breaking the fast.

ps, no…, i didn’t use mixer at all.
